Hello, I'm just a beginner at this, but I was wondering where the textures are located? I want to change some colours of some textures and add them for certain objects. Also is there a way to add in custom models?

Custom models are planned, but not implemented in the game yet. If i'm not mistaken they may also be planning an option to easily export textures for items as well.

Someone made a dump of the game textures, but it doesn't have the content added from halloween and onwards.

The actual directory is:

There are various tools one can use to extract and view them. If you are familiar with the unity editor you could probably use that.
