I didn't found the option to change handling settings, so I went through the files of the game, but also didn't found it.

Any way to change ARR or DAS in the game?

in settings you can customize everything

I went through the settings during the time I asked the question as well I went through now again.
I don't see any settings or possibility to change it.

You can't change it in Ranked matches and will need to adapt to the ARR/DAS.
On Local/Friend matches, there is a Speed setting which affects ARR and DAS. They are still preset values (one is faster, one is slower) and are served with other tweaks such as line clear delay.

Most official games doesn't allow you to tweak these anyway, notable exceptions include tetris.com and the now closed tetris friends.
