when I first heard about the controversy concerning EAC, I got a bit nervous about using VRChat and I still kinda feel a bit concerned about using it now, did they atleast do something to acknowledge it? is it safe to go on?

There is nothing unsafe about EAC. The only issue was that it nuked mods. Which was both good and bad. It prevented mass-malicious clients... but specialist bad clients still exist. But all the good mods that made the game nicer, convenient, and easier to use are also gone.

Well, EAC can be considered privacy-violating too. You can see it in action, turn off the game a few times when EAC is doing the boot-up phase. Eventually it'll do a PC scan the next time the game's started, checking all the folders to find out what's causing it. Might be a rare occurance.
Because it respects being turned off, and doesn't do anything unless when in use (such as playing the game), rule of thumb is just to not do anything sensitive (taxes, watch NSFW, etc.) while it's running. Typically not a problem as I doubt you'd be doing so when you're playing VRC.
